Every Saturday from November through to April, Lázaro Cárdenas Park becomes the stage for the Olas Altas Farmers' Market, now in its 17th season. More than 100 local producers gather to sell organic food, international street cuisine, vegan specialties and handcrafted goods. It's equal parts farmers' market and community gathering and one of the most authentic mornings you can spend in Vallarta.

Beyond the city, the farm-to-table movement has taken hold in the surrounding foothills. Spots like Cosecha Farm to Table at Rancho Orgánico El Edén build their menus entirely around what's growing that week, harvested steps from the kitchen. Seasonal, uncompromising and deeply connected to the land.

Puerto Vallarta has been building serious culinary credibility for decades, anchored in part by the Festival Gourmet International, a now 31-year-old annual event that draws 60-plus guest chefs, 30-plus restaurants and wineries from across Mexico and the world each November. Founded by pioneering chefs Thierry Blouet, Heinz Reize and Roland Menetrey, it remains one of the most important culinary events on the Mexican calendar and a direct reflection of how seriously this city takes food.

That reputation reached a new milestone in 2026, when the Michelin Guide expanded into Jalisco and officially recognized Puerto Vallarta for the first time, with Restaurant Icú and Pancho's Takos becoming the city's first Michelin-selected restaurants. The two couldn't be more different, one a chef-driven contemporary dining experience, the other a taco counter, but together they say everything about what makes Vallarta's food culture so compelling.
